Age can significantly change a wine, producing beautifully complex and unique flavours. With age, the powerful fruity aromas and flavours a wine displays in its youth evolve with bottle age, producing a more complex bouquet and palate, often with a divine savoury edge. The wine changes colour too, becoming lighter in red wine, and deeper in whites. Finally, the tannins and acidity levels soften the wine and lead its elements to better integrate.
For wines which are made for ageing, the main downside is that you have to wait several years, sometimes even decades, for a wine to develop. Thankfully, we've done the waiting for you, and carefully selected a mix of aged and museum release red and white wines. There are sublime examples ready for drinking now, but they could also still be held on to for a few more years to come...
