Small discrete batches of older Shiraz were selected then fermented in open topped vessels before pressing through a traditional basket press. Keeping all fruit parcels separate, the individual wines were each matured in a combination of new and older French and American small oak casks for 24 months before final blending. A lovely broadness and weighted texture so common of McLaren Vale Shiraz with a degree of earthiness and spice, ripe coffee and mocha notes matched by firm tannins and charry oak giving the wine its roundness and palate persistence.
