"Attwoods Wines is located in Scotsburn, just south of Ballarat, Victoria. Specialising in cool climate Pinot Noir, their Old Hog range, although still in very small quantities, can be found in some fantastic restaurants and wine shops throughout Melbourne and Sydney. The Attwoods Wines philosophy is very much minimal intervention with their wines wherever possible. They pick early to ensure a good acid profile, favour whole bunch and use a sorting table. They don't inoculate, preferring wild yeast fermentation in their large format oak fermenters. Since they are always striving to allow the wine to truly express terroir, they do as little as possible and for this reason you'll always see vintage variance in their wines.
