"Prior to deciding what wines can be made every vintage, David and Liam sit down and look critically at the wine that was produced and try to decipher how to make the best 'Springflat' possible. Yes, sometimes this means that we do not make a 'Shiraz Reserve', as it is often needed to bolster the Springflat's complexity.
Making this wine unique, the fruit is sourced from eight high quality vineyards across our region, four of which we own and run ourselves, stretching from Colbinnabbin in the North, to Mia Mia in the South. These vineyards are living in various soil types ranging from the rich 'Cambrian' volcanic soils of the North, to the dense, acidic, granite and quartz-laden clays of the South. This allows the 'Springflat' to express a very 'Heathcote' complexity and richness.
Open fermented, hand plunged, basket pressed, and a restful 21 months in 40% new French and American oak hogsheads allows the Springflat to gently mature into an opulent, full bodied Heathcote Shiraz."
