"Made to express sub-regional variation in Heathcote Shiraz, Cornella is a wine showcasing fruit the warmer area in the north of the Heathcote region.Coming from our two vineyards on the eastern slopes of the Colbinabbin Range, Cornella is 100% Shiraz made to highlight the sub-regional variation in the Heathcote Wine Region. The parcel of grapes that goes into Cornella would normally be blended into Springflat Shiraz. Growing in rich Cambrian era soils, the selected grapes are fully de-stemmed and fermented in small open fermenters. Gently hand plunged and basket pressed into second use French oak barriques and hogsheads. With careful cellaring, Cornella Shiraz can be enjoyed for up to 15 years from harvest."
"Dense fragrance of pepper, blackberry, leaf and stone. You can smell sun-baked earth in the glass. The palate is big with sweet dark fruits and a meaty note. Second use hogsheads are used to mature this wine for 22 months. It is round and full, in contrast to the refined Mia Mia. The blood plum and bold tannins combine for mouth-coating complexity. The palate is long and with a sweet fruit core."
