[SOLD-OUT] Tomfoolery Black and Blue Shiraz 2015

The Tomfoolery ‘Black & Blue’ Shiraz is sourced from a select premium vineyard in the northern sub-region of Ebenezer in the Barossa Valley. Grown by 5th generational grape grower Adrian Hoffmann this site offers soils that are commonly sandy loam over heavy red clay which provide a controlled yet accessible source of water allowing the vines to produce stunning fruit. The Shiraz (95%) is handpicked at optimum ripeness and flavour profile ensuring overall balance before being gently destemmed to keep as many whole berries as possible and then co-fermented with lightly pressed Viognier (5%) bunches for a minimum of five days with the juice being pumped over the skins twice daily to maximize oxygenation and purity of fermentation. Once the wine is dry it is then gently basket pressed, minimizing the extraction of harsh extractive tannins. Matured for 18 months in seasoned French oak barriques.


Big and bold, with a punch of plum pudding, liquorice and caraway seeds, all smothered in bramble jam. Full-bodied, rich and satisfying with ripe plummy fruit and bacon smoke, tightened on the finish by fresh acidity and meaty chunks of firm tannin.
