It’s dense, ripe dark fruit with something of an earthy/tobacco/coffee ground bass, plush silty tannin, balanced acidity, and a long savoury finish. The texture here is excellent, and the earthy/gravelly bits are right on for the grape variety, and in a strange sort of twist, it reminds me of Pomerol, if you’ll forgive me the redundant comparison. 2021 was a great year for Cabernet Sauvignon. Our close planted vines are producing some high quality fruit. We selected the premium rows for this small batch, only 1,500 bottles produced. All fruit was gently destemmed and fermented on skins for around 21 days using natural yeasts. We were aiming for good structure, colour and fine firm tannins. Aged in 20% new oak and a selection of 1, 2 and 3 year old barriques for 9 months.
