"The 2007 Cellar Reserve Braemore Semillon gives lovely waxy lemon and paraffin aromas with some lemon curd, warm apple and an earthy / chalky undercurrent plus a whiff of yeast extract. It finishes long and stony. Drink it now to 2018+.
"We aim for a bit more texture in our Semillons," Andrew informed me during my visit to the Hunter in October 2010. "We do tend to press a bit more than most to give a little more texture but not so the wines are overly phenolic." Because their dry wines have very little residual sugar, less than 1.5 grams per liter, texture is obtained with more solids in the ferment followed by some time on lees.."
