"A wine of ‘completeness.’ Great structure, plenty of plush fruit with high tone aromatics. An enormous amount of effort is placed on making the wine with dozens of parcels of fruit picked separately at different times and fermented separately to gain complexity from each single vineyard. The individual parcels are then matured on their lees (develops great texture) in different format (larger and smaller) barrels to allow them to mature at different rates adding further complexity Finally up to 2/3 of each production is declassified to ensure only the best components are included in the final unfiltered and unfined bottling."
