"SØŪTH wines is a project started last year between two southern Italians guys who meet in South Australia. The meaning for the word SØŪTH is powerful as it speaks of our roots, history and values. Southern Italian varieties in South Australia. The letters Ø & Ū have both a specific meaning. Ø means island/peninsula like Australia and Italy. Ū is the phonetic accent of people of south of Italy when pronouncing "O’ Sūd" (the South). The label represents the two most important volcanos in Italy: Vesuvio and Etna, one of top of each other.
Grapes come from Fleurieu Peninsula. 30% Currency Creek & 70% McLaren vale. Co-fermented together. The grapes are harvested by machine and arrive in the winery with 13,2 Baume, ph 3.30 and TA of 7,5gr/l. Grapes are destemmed and crushed transferred into an open ferment. After inoculation with yeast the must is ready to be fermented with the skin for 12 days. Every day the must is pumped over twice a day for 10 minutes, until all sugar is fermented. Once the fermentation is completed, the grapes are gentle pressed using a membrane press and transferred into steel tank ready for malolactic fermentation. Once it's completed the wines is transferred into old French oak ready for maturation and ageing." - South Wines
