"Maybe not so much like a Cabernet, in a way more like a Beaujolais/Cabernet cross over. It’s supple and succulent, red fruit, honey and ginger biscuits, a whiff of paprika, lovely perfume with it. There’s medium-bodied appeal, a gloss and glide of silky red fruit, nutty too, a subtle ripe blood orange and mixed peel flavour, a stony ‘mineral’ feel, spicy with poached strawberry to close on a finish of satisfying length. "The 2021 blend consists of 30-40% Merlot and Cabernet Franc, a touch of Malbec, Petit Verdot and Carménère, with the remaining Cabernet Sauvignon. The bouquet of the 2021 Cabernet Sauvignon Cabernet Franc Merlot shows blackberries and wild cherries. The medley of dark fruit combined with elegant tannin and integrated oak creates a delicious mouthfeel with depth and lingering flavours. Still a young wine, it will benefit with cellar time.

A low crop level is important to ensure the fruit ripens and achieves maximum flavour. The wine was fermented for 4 weeks on skins before pressing. Natural yeast is used throughout. The wine undergoes oak maturation for 24 months before final blending and bottling without filtration." - Sorrenberg
