Our Pinot Noir and Chardonnay sparkling blocks grapes were hand-harvested and whole-bunch-pressed to tank, ensuring gentle extraction of delicately flavoured juice with bright natural acidity. Primary fermentation was carried out in stainless steel to promote freshness and vibrancy, and then taken through secondary malolactic fermentation to build texture and soften the palate.
