"...The aromatics have what is now a trademark Samuel's Gorge black fruit spectrum as at its core. The estate vineyard delivers dark mulberry notes with amazing consistency. A unique ridge top with hungry ancient soils, the full ark of the summer light with a view of the sea. Take these extraordinary elements and apply exceptional viticulture (thanks to the Youngers and the team) and you end up with stunning fruit year "in year-out no matter the conditions of the season. As detailed in previous editions of The Goss we fold in other flavours and nuances from other selected fields across the Vale. Some miso from the coast, cinnamon from the sands, liquorice from the Biscay clay, dark cocoa from the loam....

Geology/ Paddock The fruit for this wine comes from a consistent bunch of growers; they have now produced wine grapes for me at Samuel's Gorge for over 9 years and most pre-date that in other ventures. They all enjoy a drink as much as I do, more often than not from their own blocks. I source fruit from vineyards of massive contrasts in geology and aspect to the sun; most have elevation and therefore smell sea breeze. 30 % of the Shiraz is estate grown on our rocky ridge here at the homestead. The homestead fruit sets the scene for fresh black fruits and super fine tannins which are at the heart of the Samuel's Gorge style.

Shed
Skin contact time is critical. McLaren Vale has a tendency toward opulent rich wines so I work hard on texture and flavour from the grape skin. This wine is matured in about 20 % new oak from an arsenal of coopers. I choose barrels that contribute fine tannins and earthy flavours. Barrels from the Tonellerie of Saury and Sylain in Bordeaux; Gillet and Dargaud Jaegle in Burgundy. Just a little smoke and char for complexity. In ferment we engage some endemic, wild yeasts that further the cause for savoury flavours.
