Salomon's wine is textbook in that regard, however, the note sits in the background behind beautiful ripe apple, lush pear and mineral flavours. It is a textural wine, weighty with a gentle grip. Present and powerful on the palate, it is balanced with a fresh citrus lift. Aged on fine lees in large oak, these techniques show in the wine's rounded palate and the faintest hints of pastry.
