The palate is similarly generous and rich, plush and impenetrable, tightens on train tracks of cedary, firm and long ribbons of tannin and overall it feels succulent despite the heft and concentration. Hand harvested on the 28th of February, crushed to an open top fermenter, gently pressed after spontaneous fermentation and just 12 days on skins.
