"Our first batch that explores a longer elevage of two years. The first in ceramic eggs which we feel bring an elevated minerality during fermentation and maturation. Then the wine is stirred up and racked to a seasoned 2000l foudre. Here the wine evolves slowly as the lees settle out and protect the wine.
