"We just love high-country Gamay. It's wicked bright fruits, gaminess, fine tannin and acidity. We plopped (technical term) some Pinot Noir in the brew this year to explore some floral notes and double-down on savouriness.
The Gamay sourced from Johansen and Coppabella vineyards in Tumbarumba at an altitude of 700m. 2023 was a great year up in Tumbarumba, riper flavours. A bit of a change this year, fruit was process to whole berries (no clusters) and held to infuse on skins prior to fermentation kicking off. Gently handled through this period, plunged down once a day then left on skins for another week and then pressed to older puncheon. Once MLF complete, wine was cold settled and bottled.
