"The Prophet’s Rock Pinot Gris comes from both our Home and Rocky Point vineyards. Planting in these warmer areas of Central Otago and practising careful viticulture allows us to produce a very aromatic style of Pinot Gris, while retaining the trademark freshness of the region. This wine has achieved an avid following and wide acclaim, despite very limited production.
The vinification is heavily influenced by Paul’s time in Alsace where use of wild yeast, multiple small vessels and long ageing are the norm. After long slow ferments the various components are aged on their yeast lees before bottling.
This is a truly aromatic expression of Pinot Gris and a marvellous food wine. The Prophet’s Rock Pinot Gris has received exceptional reviews since the first release in 2007 and has been a matched wine on the degustation menu at Heston Blumenthal’s Michelin three-starred restaurant The Fat Duck. Winner of the Air New Zealand Fine Wine Award for New Zealand’s top iconic wines since the award started in 2016.
A wide spectrum of aromatics from pear and white peach, citrus, quince and spice notes with an underlying minerality. These aromas are echoed on the palate, highlighted by crisp acidity and a long finish. The texture, freshness and concentrated aromatics mean that this wine will harmonise will with a wide range of dishes. Consider white meats, seafood and fish, the wine will also work well with mildly spiced dishes."
