"At the time of writing, this wine is still to be released and it's already controversial. There was no 707 in 2000 or 2003, so why would Penfolds release a super-premium from a vintage that it openly admits was as challenging and drought-ravaged as 2007? Many will be tempted to attribute this decision to Foster's bean counters. Many, that is, who haven't tasted the wine. The secret here is the depth of Penfold's vineyard resources across South Australia. The volume produced this year is smaller than usual (so get in quick), but the quality is everything you'd hope for from a much stronger vintage " tightly defined tannin texture, precise fruit profile and complexing elements of leaves, mixed spice, coffee and dark chocolate oak. "The Penfolds Bin 707 is essentially Block 42 and Block 41 Cabernet matured in 80% new American oak. It has a ripe almost decadent nose of blackberry, raspberry, cough candy and a touch of truffle. The palate is well balanced with vibrant with fine tannins, great tension here, layers of corpulent red cherry, kirsch, mocha and espresso with great delineation on the compact almost tart finish.
