"The company line is that this wine was inspired by Bin 707 Cabernet, and invented by former chief winemaker John Duval in response to freer availability of cabernet grapes in 1990. This is a very fine Aussie cabernet, showing raspberry and cassis fruit backed by leather, walnut and cedar overtones from oak maturation. The palate is lively and firm with plenty of tannin giving density, authority and grip. It will cellar well and cope with hearty food, such as beef wellington."

"The 2000 Cabernet Sauvignon, Bin 407, South Australia, $26, was aged in oak for 12 months in French, 16% new, and American, 12% new. It has inviting aromas of currants, blackberry, bitter chocolate, and a touch of sweat. The palate adds cranberry, cherry, and loads of tannin and the finish is long and medium-broad. The wine has excellent structure, integration, and layers of flavors and should be much bigger, richer, and smoother with another two years of bottle age. Very nice."
