The explosive bouquet showing great complexity of almond meal, roasted hazelnut and peanut butter nuances, the palate flavour no less profound and intense, full-bodied and powerful. It's intoxicating to the senses—the full orchestra is playing. Perhaps it lacks the refinement of the Ada River wine, but it's no less complex or powerful. "Patrick Sullivan has partnered winemaking and vineyard management with Bill Downie in Gippsland for years. He decided to start making his own labels as he wanted to concentrate on Chardonnay while Downie wanted to make pinot noir. The pair are still great friends and source their fruit from the same vineyards.

Patrick chases richness in his Chardonnay. He says he is tired of the ‘Chablis style’ many Australian producers have moved to. We were impressed by the wines' mouth filling body, with concentration of flavours and a healthy acid line that keeps them balanced.

The vineyards are all older and dry grown providing quality fruit which is put through 100% malolactic fermentation and the expert use of oak makes for very delicious drinking. Of the three, Bull Swamp is the warmest site, giving riper fruit nuances and a softer framed palate." - Wine House

 

"The Bull Swamp vineyard was planted in 1982 on the very edge of the Warragul township. The Bull Swamp Chardonnay comes from the oldest plantings on a north-facing aspect of the site. This section of the vineyard receives the least amount of airflow, relative to our other sites, and the northerly aspect provides full sunlight and exposure resulting in powerful, rich fruit.

Nose has pear, lime, peach and melon, with rich drive and intensity. The palate has brioche, lime, melon and pear, with a weighty mid-palate and a line of acidity that lingers for some time." - Patrick Sullivan
