"The nose is mineral with brioche and lemon zest. The palate is mineral with melon, sherbert, lemon zest and brioche. The Baw Baw Chardonnay comes from the youngest plantings - 25 years old - that we farm on the Bullswamp Vineyard. This section of the vineyard faces south, with moderate airflow and exposure, producing fruit driven wine with depth and minerality." - Patrick Sullivan
"Patrick Sullivan had famously partnered with fellow Gippsland winemaker William Downie for years, but at one point decided to start his own label focusing on Chardonnay, leaving Downie to focus on producing Pinot Noir. The pair are still great friends and source their fruit from the same vineyards.
Patrick chases richness in his Chardonnay, having said he is tired of the ‘Chablis style’ many Australian producers have moved to. We were impressed by the wines' mouth-filling body, concentration and acidity keeping them balanced.
The vineyards are all older and dry grown, providing high quality fruit that's put through 100% malolactic fermentation. This, with the expert use of oak, makes for very delicious drinking." - Wine House
