"Location of the vines: Chitry 12 km South-West of Chablis.


Soil types: Clay and kimmeridgian limestone marl (from the Jurassic) the vineyards growth on multiple rolling slopes with old vines with roots digging deep to express the minerality of Chitry's unique terroirs.


Regarding viticulture Morin respect a natural approach using natural compost as fertiliser, no chemical, no herbicides and allowing grass to growth between the vines. Soils are worked regularly, so the roots plunge deeply in the Kimmeridgian limestone soils. Natural weeds are let grown in between the vines rows only controlled by mowing when it needs it. Traditional restitution of pruning wood after crushing is common. Regular cropping, detailed trellising, and systematically removing of buds are a few other manual works done at the vineyard.


Grapes are hand harvested. Olivier vinifies with minimal sulphur added, using only natural yeasts to respect even further each vintage. Short pre-fermentation maceration at 12 degrees. Traditional vinification in tank with pumping over and delestage with no punching down. Pneumatic pressing. Low yield and optimal maturity thanks to quality work in the vineyard allow Olivier Morin to avoid to chaptalize. Malolactic fermentation is completed. 12 to 15 months in tanks and old barrels


Thanks to natural settling the wine is bottled with no or light filtration depending on batch and vintage.  Nice bright color, noise of fresh cherry and rose, medium bodied with great balance and purity of fruit. The finish is slightly spicy and loaded with perfectly ripe red fruits."
