"A very small make. Hand-picked, chilled overnight, whole-bunch pressed to puncheons for wild ferment, aged on lees for 10 months before transfer to stainless steel and a further 6 months maturation. Joyously concentrated, but self-contained. " - James Halliday
Sourced from the Aquaduct Block of Henk’s Vineyard vines, planted in the red volcanic soils of Woori Yallock in 2008, this Chardonnay is a treat, elegantly balancing the riper, plumper stone fruit flavours with well-structured acidity and oak influence.
The fruit was handpicked and pressed directly into 20% new oak puncheons for a wild fermentation, followed by 10 months on the lees before bottling. There’s a gun flinty smokiness on the nose with fresh green apples, lemons and baked peaches. The palate is smooth, ripe and luscious with fresh and vibrant acidity. Plump peach and vanilla clafoutis, golden delicious apples, conference pea, hazelnuts, elderflower, roasted praline almonds and a long, lingering finish." - Wine Front
