"Very reserved and stylish, this finely crafted chardonnay takes a long time to reveal the full extent of its depth and flavour, a non uncommon feature of wines sealed by Diam. Fractionally forward and quite floral, its very ripe bouquet of white peach, pear, nectarine, cinnamon and dusty vanilla oak reveals nutty, nougat and clove-like undertones plus a hint of wheatmeal. Supple and silky, its bright, but measured depth of stonefruit flavour gradually extends all along the palate, finishing with brightness and smoothness."

"We aim to make a Chardonnay with great length, which reaches a balance between richness and elegance. While some techniques are borrowed from the Burgundians, there are some departures from traditional practise in response to local factors, which ensure a unique wine. The most notable of these is that our Chardonnay does not undergo malolactic fermentation, as our local climate leaves the fruit with ideal acidity when it is picked. Our Chardonnay is matured in 20% new French barriques with the remainder in older barrels and large casks (1500L). The entire production is barrel fermented. As with the Triolet, grape solids are included to give the wine texture, and lees stirring to add complexity and body. The Chardonnay is also matured for 10 months.

The 2009 Chardonnay opens with aromas of citrus, peach, honey, cashew and almond. The palate is tight with acidity that fills the mouth. Despite this, it still has plenty of body. The finish is characterised by succulent, lingering acidity and the texture and flavours of green apple, melon, caramel and oatmeal. It will reward cellaring well into the future."
