"Shy and reserved - slowly unfolding its delicate, nougat-like, floral and waxy bouqet of nectarine, peach, pear and ginger, plus its more pungent mineral, buttery, creamy and lanolin notes. It's smoooth and very elegant, creamy and moderately viscous, with some toasty, honeyed development beneath its more forward presence of grapefruit and melon. Supported by a fine chalkiness, it steadily builds its intensity towards the finish, but does so with freshness, brightness and lingering savoury qualities."

"We aim to make a Chardonnay with great length, which reaches a balance between richness and elegance. While some techniques are borrowed from the Burgundians, there are some departures from traditional practise in response to local factors, which ensure a unique wine. The most notable of these is that our Chardonnay does not undergo malolactic fermentation, as our local climate leaves the fruit with ideal acidity when it is picked. Our Chardonnay is matured in 20% new French barriques with the remainder in older barrels and large casks (1500L). The entire production is barrel fermented. As with the Triolet, grape solids are included to give the wine texture, and lees stirring to add complexity and body. The Chardonnay is also matured for 10 months."

Mount Mary - Superbly refined, elegant and intense Cabernets and usually outstanding and long-lived Pinot Noirs fully justify Mount Mary's exalted reputation. The Triolet blend is very good, more recent vintages of Chardonnay even better. James Halliday 2005Mount Mary is one of Australia’s iconic vineyards. Its dryland vineyard is planted to a broad array of clones of its constituent varieties, from which Middleton’s team refined a selection from the finest mature vines. Its yields are modest to very low, and its wines nurtured according to the very disciplined approach of John Middleton, who now has a significantly expanded winery to work within.
