All wild yeast, all fermented in barrel, all goes through a malolactic fermantation. New and one-year old oak only, and 12 hours of skin contact (back at the fermentation stage). The Main Ridge Estate way with chardonnay.

It might sound like a recipe for a "big, buttery" chardonnay but the end result isn't. It has some nutty, creamy, woody characters for sure but it's zippy through the finish and refreshing all over. Mineral, melon, stonefruit and some baby pineapple flavours. Weight and length.. when it comes together it will be excellent.
