"The 2016 Vin de Constance is matured in 50% French acacia oak, Hungarian oak and regular French oak, and 50% in French foudres. This has more delineation and precision on the nose compared to the previous vintage, offering acacia honey, quince, saffron and touches of elderflower in the background. The palate is very well balanced with fine precision, a killer line of acidity and disarming purity toward a finish that lingers in the mouth. Stunning." - Neal Martin, Vinous

"Vin de Constance is made in a late-harvest style, with 2 different stages of ferment. Made with Muscat de Frontignan, 10% of the grapes are pick early and fermented to make a dry white wine which becomes the base of this wine. The rest of the grapes are left on the vines to slowly dry in the sun and begin to concentrate the sugar content in the grapes. Picked over a series of weeks, the earlier picks will have only just begun to shrivel, where the later picks will have raisined completely. This creates a sweet, yet complex wine, with the base, dry wine helping to lift the nuance of the late-harvest grapes. The skins are aggressively pressed as well, introducing tannin to give structure and balance to this decadent and opulent wine." - Wine House
