"The base wine was predominately made up of 2008 Shiraz which was aged in neutral oak for 5 years, some 2007 Hillside was added to the blend before secondary fermentation in bottle via methode champenoise. On disgorging it received a dose of our fortified old tawny, which has balanced the wines fine tannin structure and generous full finish."
