"This is a single vineyard Upper Yarra Valley 100% cabernet sauvignon from the red clay Monbulk soils of Wandin East. This vineyard has twice been named “Vineyard of the Year” at the Royal Melbourne Wine Awards. Handpicked and destemmed to whole berries pressed, fermented with indigenous yeasts in stainless tanks and left to on skins for 40 days extended maceration. It was then pressed to old French hogsheads for 18 months before being bottled unfiltered and unfined with minimal sulphur additions."
