"Handpicked from vines planted in the 1890's in the Great Western region of Central Victoria. The Syrah vines are 'Old Best's' clone on the 'Concongella' soil profile (clay over ironstone) and are fermented as 100% whole bunches in a 500L puncheon with the head removed with indigenous yeasts and 50 day extended maceration. No acid, enzymes or additives other than a small amount of sulphur dioxide was used in production. The wine is then racked to 1 and 2 year old hogsheads and puncheons and left sur lees for 15 months before being gravity racked and bottled unfined and unfiltered. Due to severe frost in the early growing season total production of this wine is 40 dozen"
