The palate has a core of dried lemon peel and a fine, lingering presence. The texture has been finessed with time and the resounding impression is of highend Champagne."

After ten years on lees, it is the patience to allow the wine to mature at its own pace and the experience to know when it is at its best that has allowed this wine to achieve rich new heights in complexity and intensity. Tasting Note Crystal clear with a fine and persistent bead, this wine is deep straw in colour with a bright yellow gold hue. The nose shows intense mushroom/butter/toast characters with lanolin and oyster nuances. On the palate, the wine is rich and flavoursome, whilst very complex and intense. Multi-layered flavours of truffle, toast and sea brine combine with a great length of flavour and brightness. A dry style with a refreshing, natural acid finish. Vintage The mild, dry conditions throughout the growing period resulted in a relatively early vintage in 1998 " 3 weeks earlier than the 6 year average. Whilst crop yields were generous, the warm and dry weather allowed full flavour ripening of the fruit. Despite malic acid levels being relatively low, due to the warm weather, the overall acidity remained strong, providing a firm natural acid backbone for the long tem maturation. Winemaking The 1998 Arras was the first of its kind, an outstanding example of the values of its cold climate origin, meticulous winemaking and commitment to extended tirage maturation. Crafted in what was to become the Arras house-style, with all the best winemaking and viticultural methods to ensure wine of the highest quality. Following ten years tirage, the E.J. Carr Late Disgorged Sparkling presents the original 1998 Arras in a new guise " a wine full of multi-layered complexity and intensity. This wine displays all the elegance, power and vibrancy of world class sparkling wine.
