“As always, this is also 100% estate fruit, sourced from 10- to 30-year-old vines on basalt, gravel and loam soils. The 2021 vintage was another cool one in Henty, providing a lengthy ripening period and excellent development of flavour.
25% was fermented as whole bunches while the rest of the fruit was destemmed but not crushed. Fermentation was in small, open-top vessels, and it was plunged once a day, then pressed to tank after 14 days to French barriques (just 15% new) for 14 months. Minimal SO2 added (50ppm).” - Hochkirch
