The Les Goulots name and wine expression comes from the particular plot it sits on. The 100% Pinot Noir vines were planted back in 1981 and the soil is brightly made up of thin layers of white marl, on superior limestone rocks. It's always the last block to be harvested every vintage, and all carefully controlled by hand. During the growing season Heresztyn-Mazzini have been working hard to achieve full conversion to organic and this 2014 was the first 'bio' wine they produced.
We are as gentle as possible in order to retain the wine’s initial flavours. The fermentation process begins using the naturally present yeast, following a pre-fermentation cold maceration process. Frequent pigeage according to the character of the vintage. This wine is made using 50-55% whole bunches. Matured in oak barrels (35% new wood) for 16-18 months.
