"79% Shiraz, 21% Cabernet Sauvignon; a seamless fusion making a classic Australian red. Grown from exceptional old-vine fruit in the famed Ebeneezer vineyard, the Cabernet is grown on very thick heavy black clay ‘Bay of Biscay’ on 30 to 130-year-old vines. The Shiraz was grown on 30 to 100-year-old vines.
It was bottled unfiltered, to ensure the wine’s natural characteristics ran through. The Shiraz brings structure and strength, the Cabernet adds an herbaceous and savoury character. The combination of dark berries, complimented by fresh thyme, plums and cardamom makes for a well-rounded, lovely dark fruited and spiced wine. This wine will mature extremely well and can be cellared to 2040 and beyond.
Just like new velvet, this wines' deep crimson has a bright sheen to it. Notes of fine leather goods and native bush gives the wine a lovely herbaceous lift with crushed mulberries pushing through the mid-palate. All gorgeous blackcurrant jubes and fresh tobacco leaves come together to deliver a powerful yet approachable wine that as it opens delivers more cardamom, cinnamon and Christmas pudding." - Cellarhand
