'Flametree is one the most exciting Margaret River producers, especially leading the way with a modern style of Chardonnay: wild ferments, minimal sulphur, low alcohol and no malo-lactic fermentation. Flametree believes the region produces enough texture from fruit and lees, preferring to preserve the acidity, purity and minerality from the original press. While they age on lees, they do not stir. The resultant Chardonnay is savoury and mineral, with flavours of citrus and pear, backed by nutty, integrated oak with a long, precise drive.'
