A sangiovese in the nouvello style. Made in small batches through minimal intervention winemaking.
"As always, sourced from Galli Estate in Heathcote. Picked early, 3 days on skins then pressed into old wood. 1 year on light lees. Zero S02 and zero adds.
In the past, we've been among to make fun, light, vin du soif. But in 2017 we worked the skins a bit more in order to grab a bit more tannin and add structure. As a result, the colour is a bit darker as is the fruit profile"

"Fragrant wine, loaded with red cherry, cranberry, white pepper, strong green herb/mescal scents. Slurpy texture, glossy, has a feel almost reminiscent of bouillon, though the flavours are of course in red fruit spectrum, though you’ll see beetroot and more pepper/green herbs and the vibe is almost tonic-like in a way too – an oddity, but appealing. Fun thing this, full of spunk and zest. Cool booze."
