Made from Omachi rice, the traditional of today's sake rice. It is polished to 50% and therefore technically being able to be labeled Junmai Daigonjo.
The Dewazakura Sake Brewery in Yamagata decided the style with its for Omachi typical umami flavour and richness is that of a Junmai Ginjo.
Serve it slightly chilled and enjoy as an aperitive or with cheese
