"With family winemaking ancestry stretching back over 400 years and with significant holdings of Premier and Grand Cru sites, it's fair to say that Daniel-Etienne Defaix know what they're doing. What they do, however, is entirely unique to them and not matched in Chablis.
This family winery release their wines very late, but the aging of the wine has been performed en masse in stainless steel tank, an environment where oxygen cannot get at the wine. Therefore the development is subtle and slow. The result is a highly aromatic and complex wine with developed character but amazing retention of freshness, lively acidity with no oxidative notes.
This Premier Cru Chablis has typical fruit and spice of its famed Vaillons vineyard, round and powerful with some buttered brioche and apple tarte-tatin characters. It's a stunner." - Wine House
