From vines averaging 40 years old. Aged 100% in stainless steel tanks. Comes mostly from very old vines situated in Les Pargues on the hill located between the premier cru sites of Montee de Tonnerre and Vaillons. This terroir has historically always been very highly regarded by locals and produces wines of extra depth and character.

The 2015 Chablis Villages, bottled two weeks prior to my visit, has a light grassy bouquet, quite simple, but clean and defined. The palate is nicely defined with a slightly resinous entry, a keen line of acidity and a twist of sea salt on the finish. Drink over the next 2-4 years. 

Like many winemakers who were suffering at the hands of hail and frost, Moreau was ruing the fact that there will be no Chablis Village in 2016, decimated by hail. "And now there is massive mildew pressure and because we are certified organic, it is more of a challenge. You have to do the work before the problem hits, but the [constant] rain stops us from doing this." Still, at least there is 2014 and 2015. "I think that there is more classic flavor in 2015 than 2013. 

I wanted to know a little more about the harvest for the 2015s. "Due to the hail on September 1, we started picking the day after. We picked all of Les Clos, Clos des Hospices, Blanchots and Chablis first over 2.5 days and then we waited, because there had been so much rain. Some of the berries had doubled in size, so we needed more concentration."
