Age of vines: 35 years old
Vinification: Manual harvest of grapes at their technical maturity. Total crushing and destemming then grapes’ cooling. Short maceration from 3 to 4 hours then pressing in a pneumatic press. Press juices’ elimination. Settling one night at 15°c. Alcoholic fermentation in stainless steel tanks at 14°C during 14 days.
Soil Type: Mica schist soil with south westerly aspect.

Chateau Minuty is a magnificent wine-growing property from the 18th century that belongs to the Matton-Farnet family since the early 1900’s. The small hills of the vineyards of Chateau Minuty are exposed to the quaint village of Gassin, which is situated in the center of the Presque-Ile of Saint-Tropez . The optimum sunshine of Saint-Tropez encourages perfect maturity of the grapes grown at the chateau. The expression of the traditional Provencal vines is enhanced by techniques of modern vinification. Chateau Minuty excludes herbicides and pesticides from their vineyard.
