"This is a Le Pavilion of mythical proportions. Produced from extremely old vines, some dating from the mid-nineteenth century, with yields averaging under 15 hectoliters per hectare, this is the richest, most concentrated and profound wine made in Hermitage. The 1991 Ermitage Le Pavilion follows the pattern of the 1989 and 1990-it is another perfect wine. The saturated black/purple color is followed by a compelling bouquet of spices, roasted meats, and black and red fruits. Enormously concentrated yet with brilliant focus and delineation to its awesomely endowed personality, this extraordinary wine should age effortlessly for three plus decades. Very powerful and full, yet displaying silky tannin, this is a seamless beauty! Anticipated maturity: 2001-2035. Last tasted 6/96."

Chapoutier

"For the last two hundred years in the Rhone Valley, and today also in the Roussillon and in Australia, Chapoutier has been producing some of the greatest wines: Hermitage, Côte Rôtie, Chateauneuf du Pape, Saint-Joseph, Crozes Hermitage, Luberon. Our own vineyards and the single vineyards we select are cultivated either organically or biodynamically to respect the terroir. All our labels are also in braille." - M. Chapoutier

"Chapoutier is today one of the most important and prestigious negotiants in the northern Rhône wine country, with the largest vineyard holdings in the Hermitage hill. From their base at the heart of the spectacular Rhône Valley, Chapoutier continue to set benchmarks for what can be achieved from the immensely varied terroir of this region – every label that leaves these cellar doors is a superbly crafted example of its appellation. What’s more, this dynamic family have extended their expertise globally, and now produce great wines in countries as diverse as Australia, Portugal and the US. Fundamental to the Chapoutier approach is a philosophy that, above all else, demonstrates the highest respect for maintaining a natural balance in the vineyard; Chapoutier is a leading bio-dynamic grower in the region, believing that artificial additions should be limited as much as humanely possible. Such dedication to preserving the unique properties of each terroir is immediately apparent when one tastes Chapoutier’s range of wines, which show an unmistakable sense of place and authenticity." - Cellar Tours
