From an organic parcel planted in the 80’s. Combe Bazin sits above Meursault on a steep slope of shallow white soil. Fermentation and 12 months aging in 228l oak barrels. No addition of SO2 to the freshly pressed juice. One big batônage in the following summer before the harvest when all the barrels are assembled in a tank. Fermentation with indigenous yeasts as well as 100% natural malolactic fermentation. No fining and a light filtration of the half of the cuvée to be assembled with the unfiltered rest. Bottled in January 2017.
