From organically managed early 90s plantings in Trois Follots, on the steep slope with limestone bedrock close to Rugiens. 100% whole cluster. Fermentation with indigenous yeast in a wooden fermenter. 24 days of skin contact. Aging in 228 litre oak barrels, racked only once after 12 months. 100% natural malolactic fermentation. No filteration and fining. Bottled in January 2017.
