"Fruit from the 'D' block in the home 'Sound of White' vineyard in the Waihopai Valley, hand-picked and whole-bunch-pressed, and warm-fermented in various large oak formats to 12.8% alc. and dryness, the wine aged at least 4 months in oak, undergoing batonnage. Bright, very pale straw colour with slight green hues, lighter on rim. The bouquet is elegant with concentrated aromas of nectarines, white stonefruits and gooseberries, entwined with barrel-ferment nutty elements, the nose unfolding layers of herbs and fl inty mineral interest. Dry to taste and medium-bodied, a tightly focused and linear flow of complex nectarine and flinty flavours is a feature on the palate. The barrel-ferment layers provide nuance and detail. The fruit has a subtle richness and succulence adding to the creamy mouthfeel, which is countered by a fine, grainy, textural backbone and fresh, brisk acidity. The wine leads to a long, lingering, dry finish. This is a concentrated barrel-influenced Sauvignon Blanc with complex detail and tight textures. Serve with herb-infused poultry and pork dishes over the next 2-3+ years."
