Colour Intense crimson with great depth.
AromaThe wine offers a complex array of fruit aromas of cassis, violets and capsicum. There are oak aromas of cigar box and spice.
Palate
The wine is tightly packed with cassis and violet flavours which are complimented by the considered use of oak which confers a firm tannin structure. The wine has concentration, focus and power and will reward cellaring for 6 years or more.
The Vineyard
The fruit for this Yarra Valley Cabernet Sauvignon was grown solely at Kevin and Margaret Ryan's Yering Grange vineyard. The vineyard is situated in the warmer southern region of the Yarra Valley. The vines are over 30 years old and are low cropping at 1.5 tonnes per acre. It is this low-cropped fruit that has, in large part, produced such a full flavoured wine.
Winemaking
My winemaking belief is that good fruit should be treated gently and with minimal intervention. The 2013 Bress Yarra Valley Cabernet Sauvignon was treated in this manner. The fruit was gently destemmed and then tipped into our 5 tonne oak vat and fermentation conducted by indigenous yeast. The wine was pumped over twice a day with a drain and return early on in ferment. The wine was pressed and settled for 2 days and racked to wood, with malolactic fermenatation occurring naturally. Post malolactic the wine was racked three times prior to bottling and not filtered. Total oak maturation time was 12 months.
Bress Yarra Valley Cabernet Sauvignon was bottled using a Screw Cap closure. Using a Screw Cap closure is our attempt to ensure that our wine is presented free of cork characters (good or bad) and that the full aroma and flavour of this wine is expressed.
