"Plenty of creamy spiced vanilla oak, rich blackberry, dark chocolate coated mint, tar and a salted licorice character. Full bodied, with sweep of ultra fine grained tannin, slight glow of warmth that's largely no burden for the wine to carry, toasty oak and briney flavour to close. Pretty long. Pretty big. Goes warmer on the finish. Heroic."

"We are in a unique position in that we are able to keep all parcels of our wine separate from the time of picking through fermentation to oak maturation. Following some barrel maturation, each parcel is assessed, and the most outstanding parcels of Shiraz are allowed further maturation before being blended to create the Old Adam.
The concentrated, high quality parcels of fruit were fermented in open vats, then matured for 24 months in new specifically selected, extra fine grain American oak."
