"All up, this spends 14 months in French oak (36% new) and the outcome is an impressive wine. No wallflower as it’s rich, ripe, full-bodied and laden with aromas and flavours of dark cherries, florals, joss sticks, chinotto, baking spices and garrigue. Raw silk tannins flood the palate, so, too the sweet fruit; concentrated and powerful, yet there’s a succulence and vitality within. A lot to consider, including cellaring for a few years before drinking. And yet, for hedonists, there’s an innate beauty making this irresistible now." - Jane Faulkner

 

"A single vine at Bass Phillip barely makes half a bottle of wine, the highly perfumed nose, robust flavors, exquisite textures, profound complexity and minerality contained in each bottle provide a justification for this practice.

Glace cherries and savory, dusty notes greet the nose initially but also showing hints of vanilla and spice; refined and poised at this stage but rest assured complexity will crescendo with time. The palate is svelte and satiny, lovely balance, resolved and complete with lovely length that will only get better with age. If drunk young we recommend decanting for an hour or so

Our Premium Pinot is a selection of only the very best barrels of which 36% were new this year. All barrels are light toasted and extra tight grain oak. Barrels are topped and checked regularly. Wine stays in barrel for 14 months, when it’s simply gravity decanted off lees via a spigot inserted at the bottom of the barrel to a blending tank. No fining of any sort, or filtration before bottling.

The story of Bass Phillip starts back in the early 1970’s when the first vineyard site, located 15 kilometres south of Leongatha, was selected to plant vines based on climatic and topographical observations which when combined with South Gippsland’s moderating influences of the mountains to the north and ocean to the south, produces the perfect conditions for long, slow ripening of grapes." - Bass Phillip
