"The 2014 vintage is a blend of 86% Sauvignon Blanc, 12% Riesling and 2% Chardonnay. One third of the Sauvignon Blanc was made using "carbo-blanc" whole bunch fermentation. The Sauvignon Blanc was fermented in 1/4 new French oak puncheons by indigenous yeasts and remained on lees for 10 months. This time on lees as well as full malolactic fermentation contributes greatly to the mouthfeel of the wine. Chardonnay contributes subliminally to the flavour while Riesling gives subtle aromatic perfume to the wine."
