Complex smelling wine with the elements of bottle age and winemaking coming together beautifully here - and I'm talking brioche, fennel, citrus, white peach and salt crackers sorts of things. The palate combinines delicacy with power and offers layers of dry savoury flavour with penetrating acidity running through a gentle creamy texture. Don't serve it too cold either as it tastes much better coolish. The finish is very long - think hazelnuts crusted with salt. It's a very impressive sparkling wine.'
